Just in time for the holidays, here is a quick and easy appetizer for entertaining friends and family. These canapés are very versatile and can be served either cool or warm. Make sure you make enough, as they are so light they will be gone very quickly.
olive oil spray
1 teas. minced garlic
chop the following finely:
1/2 c green pepper
1 c mushrooms (white or baby bella)
1 scallion or 1/4 c fresh chives
1 teas. fresh rosemary or 1/2 tsp. dried herb
black pepper to taste
Preheat oven to 375 degrees and spray muffin tins with olive oil.
(I used regular size and the slightly larger metal muffin tins
making 9 larger quiches and 2-3 smaller for this recipe.)
Lightly spray a skillet with the olive oil and sauté the veggies, rosemary and black pepper until the liquid just starts to come out. Set aside.
In a food processor combine the following:
12 oz package of lite firm silken tofu – water drained (Mori-Nu brand is suggested).
1/4 cup plain soymilk
2 tablespoons nutritional yeast
1 tblsblespoon arrowroot powder
1 teas. tahini (sesame paste)
1/4 teas. onion powder
1/4 teas. turmeric
1/2 teas. sea salt
1/2 teas. black salt (departs an eggy taste)
Process until completely smooth. Add the tofu mixture to the veggies and combine well. Spoon into each muffin tin about halfway full. Put into oven and quickly turn the oven down to 350 degrees. Bake about 30 minutes depending on the type of tins used and your individual oven. Check sooner if you are using the metal type tins as the black silicone type will take longer to bake. These are ready when a knife comes out clean when inserted in the middle.
Remove from oven and let cool about 10 minutes before removing carefully from the pan. These can be enjoyed room temperature or slightly reheated if prepared ahead of time. They are gluten free and high in protein because of the tofu and nutritional yeast. The type of veggies used are subject to your imagination so be creative but conservative, as too much volume might affect the ability of the mixture to hold together.
